Sludge Dewatering Options Compared: Filter Press, Screw Press and Drying Beds
September 29, 2026Dissolved Air Flotation (DAF): Removing Oil, Grease and Light Solids from Effluent
September 30, 2026Dairy plants generate large volumes of wastewater from cleaning tanks, pipelines, processing equipment and packing areas. The effluent is rich in milk solids, fats, lactose and cleaning chemicals. Unlike many industrial wastes, dairy effluent is largely biodegradable, which sounds like good news. Yet dairy ETPs are known for odour, foaming, sludge bulking and fat build-up when design or operation falls short.

Characteristics of Dairy Effluent
Dairy effluent typically has high BOD and COD, often several thousand mg/l, along with significant fats, oil and grease, suspended solids and nitrogen. Its composition swings throughout the day:
- Morning wash-down after reception creates heavy surges
- CIP cycles alternate between caustic and acid solutions, swinging pH
- Accidental milk spills or product losses can spike organic load sharply
- Whey from cheese and paneer production carries very high COD
Milk itself has an enormous organic strength, so even small product losses noticeably increase the treatment load.
Step 1: Reduce Losses at Source
Before investing in treatment, dairies benefit from tightening housekeeping. Every litre of milk that reaches the drain must be treated at cost. Practical steps include:
- Draining tanks and lines fully before rinsing
- Collecting first rinses for recovery or animal feed
- Segregating whey for separate utilisation
- Training staff to report and contain spills
Step 2: Screening and Fat Removal
Effluent first passes through screens to remove solids. Fat and grease are then removed in a fat trap or, more effectively, a dissolved air flotation unit. DAF with suitable chemical conditioning removes a large share of fats and suspended solids, which protects the biological stage from scum and fat accumulation.
Step 3: Equalisation and pH Control
A well-mixed and aerated equalisation tank smooths out flow surges and the pH swings from CIP. Many plants use pH monitoring and automatic dosing to keep effluent within a range bacteria can tolerate.
Step 4: Anaerobic Treatment for High Loads
For larger dairies, an anaerobic stage, such as an UASB reactor or an anaerobic lagoon, can remove a large portion of the organic load with low energy use and produce biogas. That biogas can fire boilers or generate power, turning a waste into a resource. Anaerobic systems need stable temperature and careful management of fats, which is another reason good DAF performance matters.
Step 5: Aerobic Treatment
Aerobic processes such as extended aeration activated sludge or MBBR polish the effluent to meet discharge norms. Dairy effluents can encourage filamentous bacteria, leading to poor sludge settling, often called bulking. Maintaining adequate dissolved oxygen, avoiding nutrient imbalance and controlling fats help prevent this.
Step 6: Tertiary Treatment and Reuse
Clarified water can be filtered and disinfected for gardening, floor washing or cooling tower make-up. With UF and RO, dairies can recover high-quality water for utility uses, easing pressure on groundwater.
Common Operating Problems
- Foaming: from detergents, fats or filamentous growth
- Odour: from septic conditions in poorly aerated tanks
- Sludge bulking: caused by low DO or fat overload
- Shock loads: from milk spills that overwhelm the biomass
Monitoring That Pays Off
Simple daily checks, including pH, DO in aeration tanks, sludge settling tests and visual observation of foam and colour, catch problems early. Weekly COD and BOD testing confirms performance.
Conclusion
Dairy effluent is very treatable when the plant respects its nature: high strength, high fat and strongly variable. Combining loss reduction, efficient fat removal, sound equalisation and well-chosen biological treatment gives dairies a reliable, compliant ETP and, in many cases, a valuable source of biogas and reusable water.
